Replaces three scattered model lists (ListSettingsModalViewModel,
DetailsIslandViewModel, GeneralSettingsTabViewModel) and the hardcoded
planning model with a single source. Planning launcher now uses the
opus alias instead of pinning claude-opus-4-7.
